Grain-Free Apple Cranberry Breakfast Clafoutis @OmNomAlly

If you’ve ever had that craving to eat dessert for breakfast, this recipe will take away any guilt you’ve been experiencing. These recent study findings might too.

Sure you could pop the clafoutis dishes in the oven straight after dinner for a delightful apple dessert if you choose – I’ll grab a fork and dig in with you! Even better though is leaving this this winter-warmer breakfast to bake while you’re singing (badly) in the shower then eating it at the kitchen bench while wrapped up in your bathrobe. Breakfast is always more enjoyable with a bathrobe on.

Wheat-free and grain-free, this breakfast clafoutis is loaded with protein and fiber to rev up your morning. Flax meal, chia seeds, almond meal and coconut flour – all the good stuff is here. It’s really just a bonus that the sweetness of apple and cranberries will satisfy the strongest of dessert-like cravings. So I wouldn’t advocate eating a donuts or cookies for breakfast, I would be happy eating a variation on this clafoutis over and over and over!

Wheat-free and grain-free, this breakfast clafoutis is loaded with protein and fibre to rev up your morning. Flax meal, chia seeds, almond meal and coconut flour – all the good stuff is here. It’s really just a bonus that the sweetness of apple and cranberries will satisfy the strongest of dessert-like cravings.

Ingredients
  • ½ cup flax meal
  • ¼ cup chia seeds
  • 2 tbsp coconut flour
  • ¼ cup almond meal
  • 1 tsp ground cinnamon
  • ¼ cup dried cranberries
  • 1 organic free-range egg, lightly beaten
  • 1 ½ cups almond milk
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 red apple, cored and chopped into 1cm cubes
  • ¼ cup dried cranberries
Instructions
  1. Preheat the oven to 180C and lightly grease 2 shallow individual oven-proof baking dishes.
  2. In a medium bowl, combine the flax meal, chia seeds, coconut flour, almond meal, cinnamon and cranberries.
  3. In another bowl whisk together the egg, almond milk, maple syrup and vanilla extract and then fold into the dry mixture. At first the batter will be very water, let it sit for 5 minutes to thicken up.
  4. Spoon mixture into the prepared oven-proof dishes and top with chopped apple, pushing the apple slightly into the batter. Bake for 30minutes or until set and then cool on a wire rack for 10 minutes. Serve warm with a pinch or two of cinnamon on top.
