Wheat-free and grain-free, this breakfast clafoutis is loaded with protein and fibre to rev up your morning. Flax meal, chia seeds, almond meal and coconut flour – all the good stuff is here. It’s really just a bonus that the sweetness of apple and cranberries will satisfy the strongest of dessert-like cravings.
Preheat the oven to 180C and lightly grease 2 shallow individual oven-proof baking dishes.
In a medium bowl, combine the flax meal, chia seeds, coconut flour, almond meal, cinnamon and cranberries.
In another bowl whisk together the egg, almond milk, maple syrup and vanilla extract and then fold into the dry mixture. At first the batter will be very water, let it sit for 5 minutes to thicken up.
Spoon mixture into the prepared oven-proof dishes and top with chopped apple, pushing the apple slightly into the batter. Bake for 30minutes or until set and then cool on a wire rack for 10 minutes. Serve warm with a pinch or two of cinnamon on top.
