I’m keeping it short and sweet this time for The Recipe Redux – get ready to indulge your (real food) sweet tooth! I’ve barely had time to think this past fortnight and these delightfully salted date and cashew energy balls have really hit the spot for both work and study.

The Recipe Redux theme this month was a little bit nutty (ha ha… so not funny Ally) and these energy balls are the perfect to-go snack to satisfy your nut craving:

“We had to take advantage of the fact that National Nut Day (October 22nd) falls on one of our ReDux monthly theme post days – so we can all go nuts! Share a healthy nut-filled recipe: Think whole nuts, chopped nuts, ground nuts, nut butter and/or nut flour. And Happy Nut Day!”

Got a strong craving for salted caramels? These salty-sweet energy balls will do the trick!

Serves: 20
Ingredients
  • 1 cup raw cashews
  • 2 cups dates, pitted
  • ⅓ cup shredded coconut
  • 2 tbsp chia seeds
  • 1 tbsp coconut flour
  • 1 tbsp lucuma
  • ½ tsp coarse celtic sea salt
Instructions
  1. (Optional: Soak cashews overnight in water with a pinch of salt and then dry on low heat in oven or dehydrator to activate)
  2. Combine all ingredients in the bowl of a food processor or blender. Process until well combined and smooth.
  3. Roll tablespoon amounts of mixture into balls and refrigerate until firm. Store in refrigerator for up to 1 week.
