Ingredients
1 cup raw cashews
2 cups dates, pitted
⅓ cup shredded coconut
2 tbsp chia seeds
1 tbsp coconut flour
1 tbsp lucuma
½ tsp coarse celtic sea salt
Instructions
(Optional: Soak cashews overnight in water with a pinch of salt and then dry on low heat in oven or dehydrator to activate)
Combine all ingredients in the bowl of a food processor or blender. Process until well combined and smooth.
Roll tablespoon amounts of mixture into balls and refrigerate until firm. Store in refrigerator for up to 1 week.
