Recipe Redux: Cacao & Coconut Raw Panforte

Gluten-free, paleo, vegan and raw - this rich, raw cacao and coconut panforte is perfect addition to your allergy and vegan-friendly Christmas table.

  • ¼ cup + 1 tbsp coconut flour
  • 1 cup slivered almonds
  • 1 cup walnuts, coarsley chopped
  • 1 cup pitted prunes, coarsely chopped
  • ½ cup raw cacao powder
  • ⅔ cup coconut oil, melted
  • ¼ cup coconut syrup
  • Juice of one orange
  • Zest of one orange
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground cardamom
  • ¼ tsp ground nutmeg
  • pinch of salt and pepper
  • desiccated coconut
  1. Line bottom and sides of a 20cm round cake tin with baking paper and put aside.
  2. Combine all ingredients (except desiccated coconut) in a large bowl and mix well to combined. Pour panforte mixture into prepared cake tin and press down with wet hands to compress and even out top. Wash hands and then scatter desiccated coconut over top of panforte, pressing down gently with hands again.
  3. Chill for a four hours until set, or overnight, then slice into 12 pieces and serve.
  4. Serve chilled on it's own or with fresh berries and seasonal fruit.
