Lightly Curried Cruciferous Soup

Ingredients
  • 1 tablespoon grapeseed oil
  • 1 small onion, chopped
  • 2 tsp garam marsala
  • 2 garlic cloves
  • 4 cups vegetable broth
  • ½ tsp salt
  • 1 small head cauliflower, cut into florets
  • 1 medium head of broccoli, cut into florets
  • 1 tsp lemon juice
Instructions
  1. Heat the oil in a large pot over medium-low heat. Add the onion and cook for 5 minutes, until translucent. Add the garam marsala and garlic, cooking for an additional minute.
  2. Add broth, salt, cauliflower and broccoli to the pan. Bring to a boil, then lower to simmer for 20minutes until the vegetables are tender.
  3. Transfer the soup to a blender, or use an immersion blender and puree until smooth. Divide into bowl and top with lemon juice and additional spices.
